The new book by Chef Vincent

The Scar and the Blade

From the hell of professional kitchens to my own table.

About the book

It began in the village kitchens of Normandy. It led to Michelin-starred restaurants in France, and finally to a table of his own on the other side of the world. In The Scar and the Blade, Chef Vincent tells the story of that journey: the passion, the sacrifices, the hard years and the decision to start again.

The book takes you through the swinging doors of professional kitchens, where discipline, precision and the pursuit of perfection rule every service, and where tradition and hierarchy can come at a real human cost. But above all, it is a story of resilience, change and freedom.

Eight chapters, each paired with a recipe from a defining moment of his life, retrace the people, the wounds, the departures and the choices that led Vincent to reinvent his career as a private chef and entrepreneur between Sydney and the French Riviera.

It is written for anyone who has doubted themselves, worked in a difficult environment or dreamed of taking another path. No journey is a straight line; setbacks can become strengths, and every obstacle can bring you closer to the life you want.

One message runs through every page: believe in yourself, dare to change direction, and never give up on creating your own table.
